From 1 January 2006, new EU food hygiene legislation has applied throughout the UK. All food businesses should be registered with the competent authority, such as the Meat Hygiene Service or the local authority environmental health department, depending on the type of business. The new legislation also requires food business operators (except farmers and growers) to put in place, implement and maintain a permanent procedure, or procedures, based on HACCP principles – although the legislation is structured so that it can be applied flexibly and proportionately according to the size and nature of the food business.

C series (information, preparatory acts and notices). Copies of both series
back to 1998 can be accessed from the website and, for documents before then,
